Yes pressing the left stick causes you to sprint. Also you can chain parkour by holding X, I dont know I'd this was ok the last 2 games, but I'm really enjoying how, there seems to atleast be a very rudimentary form of actual parkour.

Ifyou are running across the map, sure horse could save you more time. Most of the differences we perceive in speed are actually the differences in animations/camera view. It's like how some games, when you hold sprint they put you in "sprint view" where the edges of the screen warp. It seems like you are going faster.

OK how to sprint on keyboard? "Z" just change from walking to jogging.. But there is no way how to run fast. Also no gallop for horse, just walking/ trotting. "X" do nothing. In menu is nothing about sprinting. X on the keyboard will auto move.
